Chocolate and Banana Coins Recipe

It's been a while since I shared a recipe on here so I thought I would show you one of my favourite treats right now, chocolate and banana coins. They make a great alternative to ice creams in the Summer months because they are frozen and of course with the fruit element they are relatively healthy too so perfect for both kids and adults.


Ingredients

* 1 Banana

* 1 cup Dark Chocolate

* 1/4 cup Coconut Oil

* Handful of Chopped Dates

Preparation

* Slice the banana into coins, the best description I can give is not too thick and not too thin.

* Place them aside on a tray that has been covered in baking paper.

* Melt the dark chocolate then melt the coconut oil and then combine the two. I melted mine in the microwave but you can of course do it over a pot of boiling water on the hob if preferred.

* Dip each banana coin in the chocolate mixture and place back on the tray.

* Sprinkle the chopped dates over the top and then place the tray in the freezer for a couple of hours to set them.

* Once set store them in a air tight container in freezer and consume within 3 weeks (although I don't think you'll be able to resist them that long).

The banana takes on the texture of an ice cream so you are essentially getting a tiny frozen ice cream every time you eat one.

You can of course change the dark chocolate for milk chocolate if you like and you can also change the dates for a topping of your choice, dried strawberries I found to be another good one.

All that's left to do is enjoy!

  3. I always have ripe bananas! Will that work too? I love the ingredients here as they sound healhty without sacrificing the taste =) #pocolo
