Chocolate Coconut Mug Cake Recipe

I bought a bag of coconut flour a while ago. At the time I didn't realise how different it was to other flours. It makes for quite a dense cake and you can't use the same measures so you can't just go copying a recipe and switching the flour suggested for coconut instead.

                  

I've been experimenting since to find a good combination. If you weren't aware by now, I do love a good mug cake. These individual cakes are perfect for when you are in need of a cakey fix and of course the size of them means that you couldn't possibly share!!


My latest mug cake recipe is a chocolate and coconut flavour., so two treats in one cake and chocolate! But because of the way it is made it's surprisingly low in calories so winning all round.


Ingredients

1 Tbsp Coconut Flour
1 Tbsp Cacoa Powder
1/4 Tsp Baking Powder
1 Egg
1 Tbsp Maple Syrup
1/2 Tsp Vanilla Essence
3 Tbsp Coconut Milk
Handful of cooking chocolate broken up

Preparation

* Pop all of the dry ingredients into your chosen mug and mix well.

* Pour in all of the wet ingredients and stir until combined into a smooth mixture.

* Place in the microwave on full power for around a minute and a half.


You can eat straight from the mug or take it out and put in a dish with some ice cream or custard mmm.
