We were sent a bundle of goodies to get us started included an apron and a set of recipe cards. The girls chose to make the Secret Pesto Lucky Dip Dippers. The recipe called for chicken and code but we only had to chicken to hand so we adapted it slightly.
We decided the chief mess maker should wear the apron for this one.
If you'd like to make your own you can follow the recipe below :
Ingredients
* 50g plain flour seasoned with salt and pepper
* 2 large eggs
* 3 heaped tsp pesto
* 160g ritz cheesy crackers (we changed for mini cheddar crackers
* 2 chicken breasts
* 2 cod loins
Preparation
* Preheat your oven to 220ºc/200ºc fan and grease a baking tray.
* Combine the flour and seasoning on a plate/in a bowl.
* In another bowl whisk one of the eggs and 1 tsp of pesto, repeat with the other egg in a separate bowl.
* Break down your crackers to look like breadcrumbs either in a food processor or smash them in a large sealable bag.
* Tenderise/flatten the chicken then cut the chicken and fish into strips. Now I will admit we cheated here as I had frozen chicken strips to hand so defrosted and used those.
* Now for the messy part. Cover each strip in flour, then dip in the egg mix and finally roll in the crackers. Continue to cover each strip using the same method.
* Bake your dippers for around 15 minutes, this gives you time to clear up the mess!
Once cooked you can serve with something like chips and salad.
And of course whilst your kids are tucking into their creation the baking tray and bowls can be soaking in the Persil Washing Up Liquid.
You can't tell me that this doesn't look good, a fun task to do with the kids that ends in something tasty to eat.
