Trying to diet can be hard, especially when you love cakes and cookies as much as I do. I mean it is hard to resist the flavours and the textures. And it doesn't help when the Great British Bake Off is playing on the TV either.
There is something about the smell of them baking in the oven that is really appealing too, and licking the bowl, this just calls to my inner child.
In an attempt to curb my cookie craving I have come up with a recipe that only needs 4 basic ingredients, there there is no flour of eggs involved so not only are they healthy, they can be eaten by almost anyone!!!
Ingredients
* 1/4 cup peanut butter
* 1/2 rolled oats
* 1 banana mashed
* 1/4 cup dessicated coconut
Preparation
* Preheat the oven to 180Âșc.
* Start by mixing all of the above ingredients in a bowl.
* Spoon onto a greased baking tray. The mixture should make around 8-10 small cookies.
* Bake in the oven for around 10-20 minutes until golden brown.
The great thing about this recipe is that you can change the last ingredient to anything you want. Nuts about nuts why not opt for some chopped almonds or some crushed pistachios. Got a sweet tooth, some dark chocolate chips will turn this cookie into a real treat. Feeling a bit fruity? Dried fruit will add a tropical touch.
These cookies are easy to make and simple to adapt. What flavour would you make?

these look great, I would be tempted to add raisins. These would also make well with the wow butter (peanut free peanut butter) the stuff is amazing.
ReplyDeleteI'm not on a special diet, but these look GOOD !!
