I love meatloaf, I think partly because it was something I grew up with, I remember eating it a lot when I was younger however because I'm still trying to be healthy with my eating habits, I wanted to come up with a recipe that was still full of flavour but didn't contain so many calories/fat. Immediately I thought of turkey.
This is a meat that is packed full of protein but contains a lot less fat than other meats and the way this dish is cooked means that any fat doesn't get soaked into the meatloaf like a traditional one would.
Ingredients
* 500g Turkey Mince
* 1/2 cup Wholemeal Bread Crumbs
* 1 Small Red Onion chopped
* 1 Bottle of Barbecue Sauce
* 2 tbsp Worcester Sauce
* 2 Egg Whites
* Pinch of Salt
Preparation
* Preheat the oven to around 180Âșc, gas mark 4-5 and line a baking pan (roughly 12 x 8") with foil.
* To make the bread crumbs I whizz them up in a blender.
* In a large bowl mixed together the turkey mince, bread crumbs, 1/2 a cup of the barbecue sauce, the egg whites and the salt. (be prepared to get messy)
* Mix until all ingredients are combined.
* Place the mixture in the middle of your baking pan and mould into a rectangular shape, roughly 12 x 4".
* Spread more barbecue sauce over the top, how much is up to you depending on the type of flavour you like.
* Cook in the over for around an hour and leave to stand for about 10 minutes before slicing and serving.
I served ours with mashed sweet potato and broccoli but you could serve it with almost anything, it would be a great alternative to the traditional roast dinner, if I'm honest I'd be tempted to put in a nice baguette!!
