Rocky Road Mug Cake Recipe

Earlier this year I blogged about one of my favourite recipes, peanut butter mug cake. There are so many variations of the mug cake, it is such a simple pudding to make, perfect for that naughty but nice treat when something sweet is needed in a hurry.

After having a little experiment, I have come up with another tasty alternative version, the rocky road mug cake.

WARNING, one cake might not be enough!!

A scrummy mixture of chocolate, marshmallow and biscuit all found within a delicious, fluffy cake.

Ingredients

* 4 tbsp self raising flour

* 4 tbsp caster sugar
* 3 tbsp cocoa powder
* 3 tbsp sunflower oil
* 3 tbsp semi skimmed milk
* 1 egg
* 2 tbsp marshmallow spread
* 4 squares of dark chocolate broken up
* 1 digestive biscuit broken
Preparation

* Spoon all of the dry ingredients into a large mug and mix together.

* Add in the egg and whisk into the flour, sugar and cocoa powder .

* Pour in the milk and oil and continue to mix until you have a smooth mixture.


* Finally stir in the marshmallow spread, chocolate and biscuit.

* Cook in a microwave on high for around 2 minutes.

All that's left to do is eat it. Delicious by itself or if you really want to indulge, why not pop some squirty cream on top!!
