Last year I shared with you my favourite way of making corned beef hash, such a cheap meal to make and it always goes down well with everyone.
Since then I have been experimenting, trying to find new twists on this classic dish so that it doesn't become a boring dinner to have, so today I am sharing with you my recipe for corned beef hash lasagne which is cooked in the slow cooker.
Ingredients
* 3-4 tins of corned beef sliced
* 2 large onions sliced
* 3-5 large potatoes, peeled and thinly sliced
* 3-4 tins of baked beans
* worcester sauce
* grated cheese for on top
Preparation
* The amount of ingredients you will need depends on the size of your slow cooker. My one is a 6 litre so takes quite a lot of ingredients to fill but also means plenty of left overs for the next day.
* First step is to open the tins of baked beans and pour them all into one container. Add a few teaspoons full of worcester sauce and mix.
* Now in your slow cooker layer your ingredients. I started with a layer of baked beans, this stopped anything from getting stuck or burnt. Then add a layer of potatoes, a layer of onions and finally a layer of corned beef.
* Repeat the previous step until you run out ingredients, finishing with a layer of baked beans.
* Cook on low for around 6 hours with the lid on.
* Final step is to grate cheese over the top of your dish and cook for a further hour with the lid off.
This recipe makes enough to serve 6-10 people depending on your portion size. Perfect when served with a nice and warm crusty bread.
If you want to add a touch of spice to this dish you can sprinkle a teaspoon or too of smoked paprika into the baked beans.
