Baked Tomato and Egg Recipe

I love a good fry up, the combination of bacon, sausage, egg, tomato and the much loved hash brown is   the perfect naughty but nice food.

Trouble is when you're trying to lose weight, it isn't the best dinner option.

So I've been racking my brain trying to come up with a healthy alernative which combines some of those much loved ingredients.

In the end I came up with baked tomato and egg….

Ingredients

* 2 x large beef tomatoes
* 2 large eggs

For the salsa

* the inside of the beef tomatoes
* 1 x small red onion
* 1 x avocado

Preparation

* Preheat the oven to 200Âșc.

* Scoop out the inside of the beef tomatoes and pop them to one side.


* Crack the eggs and place on inside each of the tomatoes.

* Place in the oven for around half hour but keep an eye on the egg as it could take slightly longer to bake.

* Whilst your egg and tomato cook, it's time to make the salsa.

* Chop up the tomato which you scooped out, add in sliced red onion and diced avocado.

* Once the tomato and egg have cooked fully sprinkle some herbs over the top, I picked parsley and chives.

* Serve with the salsa, turkey rashers and a slice of wholemeal toast.


A good healthy alternative to the traditional fry up. If you don't like the idea of a baked egg, you can alway do turkey rashers with scrambled egg and plum tomatoes.
