This week I had a few bananas which needed using up. I decided to make banana cupcakes, as you'll see as you carry on reading, these cupcakes got transformed into something slightly different along the way…..
Ingredients
* 125g Butter
* 125g Caster Sugar
* 125g Plain Flour
* 2Tsp Baking Powder
* 2 Eggs
* 2 Small to Medium Sized Bananas mashed up
* 200g Chocolate
* Jar of Crunchy Peanut Butter
Preparation
* Preheat the oven to around 170ºc.
* Grease a cake tin.
* In a mix bowl cream together the butter and sugar until they are of a soft/fluffy consistency.
* Then beat in the eggs.
* Fold in the flour and baking powder.
* Finally mix in the mashed up banana.
* Pour into the cake tin and bake for around 20-25 minutes, until it is golden brown and springs back when pushed in the middle.
* Once the cake is cooked, leave on a wire rack to cool.
* When cooled, cut the cake into small even squares.
* Spread peanut butter over half of the cake squares.
* Melt the chocolate, I prefer to do this in the microwave but you can of course do this over the hob.
* Place the remaining squares on top of the peanut butter layer.
* Then pour and spread the melted chocolate over the top of each of the cakes.
* Place in the fridge for around an hour for the chocolate to set.
The only problem you have now is trying not to eat them all at once!!!
