Tuna and Cheese Pastry Melts Recipe

My kids are inpatient when it comes to food, they want it ready yesterday, so I am always trying to come up with recipes that are quick to make.

Ready rolled puff pastry is my new best friend. I never realised just how many different things I could make with it and the bonus, it doesn't cost the earth!!

A couple of weeks ago I made a large cheese and vegetable pizza, then I progressed to pizza wheels, this week I decided to experiment.

It was a case of what ingredients I could find in my fridge I used, the final result, tuna and cheese pastry melts.

Ingredients

* Ready rolled pufy pastry
* Tin of tuna
* Grated mozarella and cheddar cheese
* Mayonnaise
* Semi skimmed milk for glazing

Preparation

* The puff pastry needs to be out of the fridge for 10 minutes before using it, so whilst you wait, preheat the oven to 200ยบ C and take this time to grate your cheese and open your tin of tuna.

* Roll out the pastry.

* Spread mayonnaise over all of the pastry.

* Then cover the pastry with the tuna, you might want another 1/2 tin if you want the melts really filled.

* Sprinkle over a mixture of mozarella and cheddar cheese, how much is up to you.

* Roll the pastry.

* Brush sem skimmed milk over the pastry to glaze it.

* Cut into slices, I managed to get 11 slices out of one, but you could get more or less depending on how thick your slices are.

* Sprinkle some more cheese over the top of each slice.

* Place in the oven to cook for around 15 minutes.

These pastry melts would be perfect to pop in the kids lunches or as part of their evening dinner.
