Stuffed Peppers with Feta Cheese Sprinkling Recipe

So this week I started a teatox and the eating plan that they recommend to follow doesn't have any meat on the menu. Instead of sticking to the exact foods they have suggested, I have been trying to come up with my own meat free meals. If I'm honest I'm quite liking not eating meat!!

Below is my own recipe for stuffed peppers.


Ingredients

* 2 peppers, halved and de-seeded
* 2 tomatoes diced
* 1 medium red onion sliced
* small tin of chickpeas
* 200g couscous
* knob of butter
* feta cheese for sprinkling

Preparation

* Preheat the oven to 200Âșc.

* Prepare the couscous according to the packets instructions but add a small knob of butter for added flavour.

* Whilst the couscous is cooking, place the halved peppers in the oven.

* In a frying pan, fry the onions for 2-3 minutes.

* Add in the tomatoes and chickpeas, continue to cook for a further minute.

* Stir in the couscous

* Tak the peppers out of the oven and fill each pepper half with the couscous mixture.

* Break up some feta cheese and sprinkle it over the top.

* Place in the oven to cook for around 10 minutes.

Any left over couscous mixture can be served up with the peppers and if you need filling up more, add a side salad.
