Paella Recipe

Paella is Daddy Hazelden's favourite dish. I think he would eat it every day if I was to cook it. I think it is a meal that everyone manages to put their own little twist on and I don't know about you but I always end up making far too much, good job it can be frozen ready for another day!!!

Ingredients

* 300g Paella Rice
* Chorizo Sausage
* 3 Large Tomatoes
* Frozen Seafood Mix (defrost before cooking)
* 1 Pepper
* 50g Trimmed Green Beans (blanch for 1 minute)
* 1 Large Onion
* 2 Cloves of Garlic
* 1 and 1/2 Tsp Smoked Paprika
* Frozen Garden Peas
* 1 litre Vegetable Stock

Preparation

* Finely chop the garlic, thinly slice up the onion and pepper and cut the tomatoes and chorizo into chunks.

* In the biggest pan you have, heat up some oil.

* Cook the chorizo for a couple of minutes, then take out and set aside.

* Fry the garlic and onion for 2-3 minutes.

* Add in the smoked paprika and fry for a further minute.

* Pour in the paella rice and mix with the garlic onion and paprika.

* Pour in 750ml of the vegetable stock and leave to simmer for 10 minutes, stirring every so often.

* Pop in the pepper, green beans, tomatoes and seafood. Pour in another 150ml of stock and leave to cook for another 10 minutes, continuing to stir.

* Lastly put the chorizo, frozen peas and the remaining stock in and continue to cook for a further 10 minutes.

I like to serve it up with slices of lemons so you can pour lemon juice over the paella, that way you can put as little or as much on as you like.
