Chocolate and Beetroot Muffins Recipe
I love to bake and I think it is fair to say that the kids enjoy eating the cakes that I make. I like a good cake myself but since I am always trying to stick to a diet, I have been looking at ways to add a touch of healthy to those sweet treats. I've seen a lot of people suggest putting beetroot with chocolate. Now I love beetroot in a salad and it is known to have a lot of health benefits including reducing blood pressure, lowering cholesterol and because it is low in calories it can help stabilise blood sugars. So if I were to put it with cake it would balance out the naughty factor right?? The real test is if it tastes good though…..
Ingredients
* 120g Plain Flour
* 60g Cocoa Powder
* 170g Caster Sugar
* 170g Cooked Beetroot
* 2 Eggs
* 140ml Vegetable Oil
* 1Tsp Vanilla Extract
* 1 1/2 Tsps Baking Powder
Preparation
* Preheat the oven to 160ÂșC and pop 10 cases into a muffin tray.
* Sieve all of the dry ingredients into a bowl.
* In a blender add the beetroot, eggs, oil and vanilla and blend until it has a smooth texture.
* Combine the beetroot mixture in with the dry ingredients.
* Divide the mixture equally between the 10 cases, the cases should be roughly 3/4 full.
* Bake for 30 minutes and place on a wire rack to cool.
Now you could add icing to these but I chose not to, trying to make them less calorific, but the kids did enjoy them with a big scoop of ice cream.
I can confirm that these are delicious. I wouldn't say that you can taste the beetroot, it just seems to enhance the flavours that you are already tasting.
