Slow Cooker Breakfast Casserole Recipe

Well everyone says that breakfast is the most important meal of the day, so surely it is a good idea to have breakfast at dinner time?? It is for this reason that I have come up with this recipe for a breakfast casserole, cooked in my trusty slow cooker.


Ingredients

* Packet of Sausages (around 8-10)
* 4 Rashers of Bacon Grilled Until Crispy
* 125g Cherry Tomatoes Halved
* Tin of Bake Beans
* Packet of Hash Browns
* 12 Eggs
* 250g Grated Cheese

Preparation

* Cook the hash browns, for around 5 minutes, just long enough so that you are able to shred them.

* At the same time grill your sausages for around 5 minutes, again just enough to brown the skins.

* Spray your slow cooker with fry lite or coat in some butter, makes sure it is completely covered.

* Put a layer of hash browns over the bottom of your slow cooker.

* Then put a layer of sausages, beans and tomatoes and sprinkle some grated cheese over the top.

* Repeat the last two steps.

* Beat all of the eggs together, adding in a splash of milk, pour over the mixture of layers in the slow cooker.

* Break up the bacon and sprinkle over the top and sprinkle over a final layer of cheese.

* Cook on low for around 6 hours.


This makes a very morish dinner, I was surprised myself at just how well it turned out as I was expecting the egg to by slightly dry for the length of cooking time but the texture was just right. 

You can serve this as it is for a dinner, or perhaps pop it in a wrap to have for lunch or breakfast. 

It is a very versatile recipe as you can add in any ingredients that you like, I'm thinking if adding in black pudding next time.
