The question was just what was I going to bake? I had a look through my cupboard at the other ingredients that I had and I decided to make coconut and marshmallow muffins, adapting a recipe for muffins that I had made before.
Ingredients
* 260g Self Raising Flour
* 150g Caster Sugar
* 1 Egg
* 160ml Semi Skimmed Milk
* 1 tsp Vanilla Essence
* 40g Desicatted Coconut
* 80g Mini Marshmallows
* 1 tbsp Melted Butter
Preparation
* Preheat the oven to 200 degrees.
* Place all the dry ingredients into a bowl and mix together.
* In a jug whisk together the egg, milk and vanilla essence.
* Pour the melted butter and milk mixture into the dry ingredients and stir until smooth.
* Fold the marshmallows into the mixture.
* At this point put the mixture into muffin cases, they should be around 2/3rds full. It should make around 12 muffins. Now I couldn't find my muffin cases so I put the mixture into normal cake cases which I half filled.
* Place the muffins in the oven for around 20 minutes or until golden brown on the top.
* Place on a wire rack to cool.
* We decided to decorate the cakes by drizzling icing over the top and using the lovely sprinkles the Cake Angels provided us with.
These cakes would be great for parties and I was surprised to find when I tasted to them that the marshmallows didn't make the muffins too sweet, they just added a lovely texture and the flavour of the coconut really stood out.

DeleteLooking at the banana and oat pancake link as they look fabulous - personally I'm not a fan of anything too sweet, but judging by the pictures above I would be in the minority ;) !
