Ingredients
* 3 x medium eggs
* Knob of butter
* Handful of cherry tomatoes
* Half a courgette
Preparation
* Crack the eggs in a bowl/jug and whisk them together.
* Cut the tomatoes and courgette into small chunks.
* Warm up the oven to 180 degrees.
* Heat up a frying pan and melt a kno of butter in it.
* Fry up the tomatoes and courgette for 3-4 minutes.
* Pour in the eggs, making sure to cover the tomatoes and courgette.
* Let the bottom of the omelette set and then place in the oven to cook for a further 5 - 10 minutes until golden brown on the top.
* The omelette should slide out of the pan with no need to flip it over.
This recipe serves one/two peope depending on whether you serve it by itself or add in a side salad but it is easy enough to double/triple the recipe depending on how many people you want to make it for.

DeleteDoesn't the courgette make it a little watery? I often put leftovers in my omelette. I'll try this one too.

DeleteI'm a massive omelette fan, and our 1 and 7 year olds love them too so I'm always on the lookout for omelette varieties, I never think of putting them in the oven too, what a great idea for browning them off.
