Recently I have been putting up a lot of dinner recipes so I thought I would change it up a bit with a sort of cake recipe. Last week was my mums birthday and one of her favourite things to eat is fruit loaf, this is something that I have never made before but I thought I would give it a go. A nice easy recipe to follow.
Ingredients
* 225g Self Raising Flour
* 110g Castor Sugar
* 110g Butter
* 1 Egg
* 225g Dried Fruit (I used a mix of dried fruit and nuts)
* 8 - 10 Tbsps of Milk
Preparation
* Preheat the oven to 180degrees.
* Rub the butter into the self raising flour until it looks like breadcrumbs, I do this whilst saying, "up tickle tickle".
* Add in the sugar and dried fruit and mix.
* Stir in the egg and at the milk until it reaches a dropping consistency.
* Line a loaf tin, or you could always use a round cake tin if you don't have a loaf tin handy.
* Put the mixture into the loaf tin and sprinkle some sugar over the top.
* Bake for around an hour or until a skewer comes out clean.
You end with a lovely moist fruit loaf and I found the good thing of using a mixture of fruit and nuts was that each mouthful was slightly different from the last.
