Banana + Peanut Butter Mini Muffins Recipe

Another week, another recipe. The kids are eating my cakes quicker than I can make them these days, I am in need of an extra pair of hands!!

Well this week I decided to make some banana and peanut butter mini muffins, perfect for popping in the lunch boxes but also a great alternative thing to have for breakfast.

Ingredients

* 200g Plain Flour
* 1 tsp Bicarbonate of Soda
* 1/2 tsp Baking Powder
* 1/2 tsp Salt
* 150g Castor Sugar
* 75g Butter melted
* 1 Egg
* 3 Bananas mashed
* 2 tbsp Peanut Butter (can add more or less)
* 20 Cake Cases


Preparation

* Preheat the oven to 180 degrees and set out the cake casings onto  two baking trays.
* Sift the flour, bicarbonate of soda, baking powder and salt into one bowl.
* In another bowl mix together the mashed banana, castor sugar, egg and melted butter.























* Fold in the flour mixture into the banana mixture and mix until smooth.
* Stir in the peanut butter.
* Spoon the mixture into the cake casings.
* Place in the oven for 20-30 minutes, they should spring back when pressed.
* Put on a wire rack to cool.

These were a big hit with my little monkeys, they are moist but I use crunchy peanut butter so there is a mixture of textures inside. I think next time I will make normal sized muffins!!
